1 cup small-diced celery (2 stalks)<br />
8 to 10 slices health or seven-grain bread (according to your choice)<br />
1 package mesclun salad mix<br />

<b>Procedures:</b><br />

(1) Preheat the oven to 350 degrees F.<br />

(2) Place the chicken breasts, skin side up, on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper.<br />

(3) Roast for 35 to 40 minutes, until the chicken is cooked through. Set aside to cool.<br />

(4) When the chicken is cool, remove and discard the skin and bones and cut the chicken into 3/4-inch dice. Place the chicken in a bowl and add the mayonnaise, tarragon, celery, 2 teaspoons salt, and 1 teaspoon pepper and toss well.<br />

In American cuisine a French dip sandwich, also known as a beef dip, is a hot sandwich consisting of thinly sliced roast beef on a "French roll" or baguette. It is usually served au jus, that is, with beef juice from the cooking process. Beef broth or beef consommé is sometimes substituted. Philippe accidentally dropped it in the pan in which the beef had been cooked, but served it up anyway. The policeman came back with a couple of friends the next day to taste the 'dipped' sandwich and the French dip sandwich was born. The sandwich bar is still there and still serving French style sandwich recipes nearly 90 years later.<br />

Being French, Philippe would have called his sandwiches 'au jus', which means 'with juice', but many Americans do not know this and ask for their French dip sandwiches 'with au jus'. These days, the sauce is frequently specially prepared or concocted separately so that it is far more elaborate than merely the simple juices from the tray, but you can make it as complex or as simple as you wish. 1 can Franco-American Au Jus Gravy<br />
4 servings thinly sliced cooked beef<br />

In a 10 inch frying pan, combine gravy and beef. On a gentle heat, heat through, stirring occasionally.<br />

To prepare the sandwiches, place the beef on the bread. Serve every sandwich with small dish of gravy for dipping.<br />

Using 1/4 cupful for each burger, shape shrimps or crab mixture into twelve 3-inch patties. Press into crumbs on sheet to coat both sides; keep shrimps or crab burgers on sheet. Cover with plastic wrap. Chill at least 1 hour.<br />

1) Preheat broiler. Spread cut sides of rolls with butter. Broil rolls, buttered side up, until golden, about 2 minutes; cover.<br />
<br />
2) Melt 2 tablespoons butter with oil in large skillet over medium-high heat. Working in 2 batches, add burgers to skillet. <br />

3) Sauté until brown, about 5 minutes per side.<br />

4) Arrange 1 roll half, cut side up, on each plate. Top each with lettuce leaf, then 2 crab burgers. Spoon dressing over.<br />

1 piece small eggplant, sliced into 4 pieces<br />

2 pieces ciabatta, sliced in the middle<br />
4 slices tomato<br />
4 thin slices fontina, gruyere or mozzarella cheese<br />

1 Marinate chicken in lemon juice, rosemary, salt and pepper for at least 1 hour in the refrigerator.<br />

2 Heat 2 tablespoons oil in a grill pan and cook chicken for about 5 to 6 minutes per side. Drain on paper towel. Set aside and keep warm.<br />

3 Drizzle remaining oil on the zucchini and eggplant. Season with salt and pepper. Cook on the same grill pan for about 30 seconds per side for the zucchini and 1 to 2 minutes per side for the eggplant. Set aside and keep warm.<br />

4 Spread mayonnaise on the insides of the bread. Place 1 piece of chicken, 2 pieces each of zucchini, eggplant, tomatoes and cheese for each piece of bread.<br />

5 Grill sandwiches on the grill pan or panini maker for about 2 minutes per side until bread is crispy and cheese has melted. Serve immediately.<br />

Also, be careful to choose substantial bread. Soft bread simply won't work properly.<br />

• 1) Place a slice of bread oil-side down on the grill.<br />
• 2) Add fillings.<br />
• 3) Add last slice of bread oil-side up.<br />
• 4) Place a baking sheet over the sandwiches and press down - but not too hard. Weight baking sheet with couple of large cans.<br />
• 5) Cook for 4 to 5 minutes until dark grill lines appear.<br />
• 6) Turn sandwiches over, press down with baking sheet again, and weight down again.<br />
• 7) Cook 3 to 5 minutes longer and serve.<br />

• 1 Tbsp olive oil<br />
• 2 tsp balsamic vinegar<br />
• 8 1-oz. slices Italian bread<br />

3. Grill each panini about 4 minutes, or until the cheese is melted, and the bread is crisp. Serves 4<br />

<b>Pesto Panini and Soup Recipes</b><br />
<br />
<b>Soup Ingredients</b><br />
<br />
2 tablespoons olive oil<br />
1 small onion, diced<br />
2 carrots, diced<br />
2 stalks celery, diced<br />
sea or kosher salt and fresh ground pepper<br />
1 large can roma tomatoes, crushed<br />
2 quarts chicken stock<br />
½ pound green beans, cut into ½” pieces<br />
1 can kidney beans, rinsed and drained<br />
1 can cannellini beans, rinsed and drained<br />
1 cup small shaped pasta, cooked and cooled<br />
1 cup Swiss chard or spinach, cut into 1″ pieces<br />
1 small lemon, juiced<br />
2 cups cocktail meatballs, cooked, defrosted if frozen, optional<br />
<br />
<b>Pesto Ingredients</b><br />
<br />
½ bunch basil leaves, packed<br />
1 tablespoon pine nuts, toasted<br />
1 clove garlic, minced<br />
1 cup Parmesan cheese, grated<br />
salt and pepper to taste<br />

1. If your slow cooker has an insert, place it over medium heat with oil; otherwise use a heavy fry pan. Add onions, carrots and celery, season with a little salt and pepper and sauté until translucent.<br />
2. Return the insert into the slow cooker and add tomatoes, stock, and green beans. Cook on low heat for at least 1 hour or up to 8 hours.<br />
3. About 15 minutes before serving, add kidney and cannellini beans, pasta, Swiss chard or spinach and meatballs, if using. Serve with a swirl of pesto and lemon juice to taste.<br />
<br />
<b>Pesto Instructions</b><br />
<br />
1. In a blender or the bowl of a food processor, add garlic and pine nuts. Pulse until you have fairly small pieces.<br />
2.Add basil and pulse until it becomes a paste. Add cheese and pulse to blend; with motor running, add oil until you have a smooth paste.<br />
3.Season with salt and pepper, set aside.<br />

<b>Panini Instructions:</b><br />
<br />
1. Heat a panini grill while you prepare the sandwich. Or if the sandwich is pre-made, remove from refrigerator and let come to room temperature.<br />
<br />
2. Brush pesto or mustard on one side of all 8 slices of bread. Layer with ham and cheese, cover with the other side of prepared bread. Brush the outside of the bread very lightly with oil or butter and place that side down on the hot panini press. Brush the slice of bread facing up with a little butter or oil and close the panini lid. Cook until the cheese is melted and the bread has toasted to a light brown.<br />
